  • 2 pounds sweet potatoes
  • 6 slices turkey bacon
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1/2 cup green onions, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornflakes, crushed

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the sweet potatoes, then boil until tender.
  3. In a frying pan, cook the turkey bacon until crispy, then crumble it.
  4. In a large bowl, combine sweet potatoes, sour cream, cheese, green onions, bacon, garlic powder, salt, and pepper.
  5. Transfer the mixture to a baking dish and top with crushed cornflakes.
  6. Bake for 25-30 minutes or until golden and bubbly.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • This dish can be prepared a day in advance and baked before serving.
