  • 2 pounds sweet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup butter
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions
  • 1/4 cup crumbled bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and chop sweet potatoes, then boil them until tender.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add cheese, sour cream, butter, garlic powder, onion powder, salt, and pepper to the mashed sweet potatoes. Mix until well combined.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Top with green onions and crumbled bacon.
  7. Bake for 25-30 minutes until heated through and golden on top.

Notes

  • For a healthier version, substitute Greek yogurt for sour cream.
  • Add more cheese on top for extra flavor.
