Sweet potato recipes : Loaded Twice Baked Potato Casserole

A creamy and delicious loaded twice baked potato casserole made with sweet potatoes.

Ingredients

  • 4 sweet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45 minutes or until tender.
  3. Let the sweet potatoes cool, then scoop out the insides into a bowl.
  4. Add sour cream, cheddar cheese, bacon, green onions, garlic powder, onion powder, salt, and black pepper to the sweet potato flesh. Mix until creamy.
  5. Transfer the mixture into a baking dish and sprinkle additional cheese on top.
  6. Bake for an additional 20 minutes until heated through and cheese is melted.

Notes

  • This dish can be made ahead and reheated before serving.
  • Feel free to add extra toppings like more bacon or different types of cheese.
