- 4 sweet potatoes
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 2 green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Black pepper to taste
- Preheat oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45 minutes or until tender.
- Let the sweet potatoes cool, then scoop out the insides into a bowl.
- Add sour cream, cheddar cheese, bacon, green onions, garlic powder, onion powder, salt, and black pepper to the sweet potato flesh. Mix until creamy.
- Transfer the mixture into a baking dish and sprinkle additional cheese on top.
- Bake for an additional 20 minutes until heated through and cheese is melted.
