- 2 cups orzo pasta
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup zucchini, diced
- 1 cup bell pepper, diced
- 1 cup spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, sauté until translucent.
- Add the zucchini and bell pepper, cook until slightly softened.
- Stir in the orzo, vegetable broth, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 10 minutes.
- Remove from heat, and stir in the spinach and ricotta cheese.
- Transfer the mixture to a baking dish, top with mozzarella and Parmesan cheese.
- Bake for 25-30 minutes, or until cheese is golden and bubbly.
